Ingredients
Chorizo:
- 1 lb 85/15 Lean Ground Pork (450g)
- 5 tsp Max’s Hot Sauce (25g)
- 4 tsp Apple Cider Vinegar (20g)
- 2 Cloves Fresh Garlic (6g)
- Seasoning Mix:
- 1 tsp Kosher Salt (4g)
- 1 tsp Ancho Chili Powder
- 1 tsp Dried Oregano
- ¼ tsp Chipotle Powder
- ¼ tsp Coriander
Spicy Queso Blanco:
- 2 tbsp Unsalted Butter (28g)
- 5 tsp Max’s Hot Sauce (25g)
- 1 can Evaporated Milk (5oz or 150g)
- 4 oz Block Monterey Jack Cheese (112g)
- 6 slices White American cheese (4oz or 112g)
Nacho French Fries:
- 2 lbs Frozen Crispy French Fries (32oz or 900g)
- Seasoning Mix:
- 1 tbsp Cheddar Cheese Powder (7g)
- ½ tsp Sweet Paprika
- ½ tsp Garlic Powder
- ¼ tsp Chili Powder
- ¼ tsp Onion Powder
- ¼ tsp Cumin
- ¼ tsp Kosher Salt
- Dash of Black Pepper
- Dash of MSG
Toppings:
- 2 Medium Roma Tomatoes
- 1 Medium Jalapeno
- 1 Medium Avocado
Chorizo Making:
- Peel and mince fresh garlic cloves
- Combine the ground pork, Max’s Hot Sauce, apple cider vinegar, minced garlic, and all chorizo seasoning mix ingredients in a large bowl. Mix thoroughly.
- Cover and let the mixture marinate for at least 30 minutes, ideally overnight for enhanced flavors.
Cooking Chorizo:
- Heat a large pan over medium-high heat.
- Add the chorizo mixture, allowing it to brown on one side before flipping.
- Crumble the chorizo as it cooks. Once fully cooked, set aside.
Making Spicy Queso Blanco:
- Shred apart Monterey Jack Cheese into small chunks with your fingers
- In a medium saucepan, melt butter over medium heat until foaming.
- Add evaporated milk, shredded Oaxaca cheese, American cheese, and Max’s Hot Sauce.
- Whisk continuously until the cheese is melted and the sauce is smooth and thickened.
- If too thick add a splash of milk till desired consistency. Season to taste and remove from heat.
Cooking Nacho French Fries:
- Create seasoning mix in a large tossing bowl.
- Prepare the fries according to the package instructions until crispy.
- Immediately toss the hot fries in a large bowl with the fries seasoning mix until evenly coated.
Toppings:
- Chop the top and bottom off the tomatoes.
- Slice a quarter of the way through and remove the seeds. Then cut into a small dice
- Chop the top of the jalapeno and cut into circular slices.
- Then cut avocado in half and remove the pit, then slice thinly.
Final Assembly:
- In the serving dish, layer seasoned french fries on the bottom, top with generous amounts of cooked Chorizo on top.
- Drizzle with Spicy Queso Blanco over top, then garnish prepared toppings and anything else desired

Of course, first wash and peel a little over 2 lb of russet potatoes. Then boil them for 3-5 minutes before removing them on a sheet tray with paper towels to cool. Once ready, heat 2 liters vegetable oil to 350°F and fry for 3-5 minutes until golden brown. From there continue the recipe as written by seasoning the french fries while still hot from the fryer.
